Wedding of a Royal Fashion

After thinking of a subject to write about for my first column for Wedding Year Round, we all had a chance to witness the union of Prince William and Catherine Middleton.  I had just graduated from culinary school in 1981 when I attended a European trip which started in London; it was 1 month before the Royal wedding of Prince Charles and Lady Diana Spencer. London was a buzz with the pending wedding and it was an event that I had not experienced before here in the States. It had really brought together the people of England to help celebrate this grand event.

So as I started to watch the recent wedding and was reminiscing of my previous travels I could not help but think that a wedding of this fashion with all of the pageantry and protocol  is not just a grand event for the English but also for the for the institution of marriage. Although we will probably not have had a 3 mile ride in a horse drawn carriage it does remind us of the importance of the special day that and how you bring together your family and  closest friends to share this moment that will last a life time.

As a caterer I listen closely to my clients to create a menu that is a signature of the couple and what they would like to share with their guest. The food is important but what is the most important is the couple and nothing can over shadow them. Of all the weddings that I have helped execute I find that each one is different in a special way that makes it their own.

 

I look at the popular trends that are out there but I depend mostly on my 30 years experience in kitchens from here to France, Caribbean and serving 3 First Families at the White House from 1992 to 2005. I love to work with local ingredients from the Lancaster area when there are in season. I take my ingredients very seriously because if you start with good products you will end up with a better result. I have had the chance to work with a wide variety of cuisines so if you wanted to have an all vegetarian, Asian or South West Style menu I would be able to accommodate most requests.
